Alpha-Carotene
(6'R)-β,ε-carotene
Alpha-carotene is a carotenoid pigment and provitamin A compound found in carrots, pumpkins, and other orange vegetables. It consists of a 40-carbon chain with conjugated double bonds and two distinct ionone rings (beta and epsilon). As an antioxidant, it helps neutralize free radicals and supports immune function and vision. It is less abundant than beta-carotene but exhibits similar biological activity. Alpha-carotene is lipophilic and accumulates in fatty tissues. Research indicates potential protective effects against certain cancers and cardiovascular disease due to its singlet oxygen quenching ability. It is biosynthesized in plants via the MEP pathway and is stable under normal food processing conditions but sensitive to light and oxidation.
