Lycopene is a bright red carotenoid hydrocarbon pigment and phytochemical found in tomatoes, watermelon, red carrots, and other red fruits and vegetables. It consists of a long chain of conjugated double bonds (all-trans configuration in natural form) making it a potent antioxidant that neutralizes reactive oxygen species. Lycopene is lipophilic and accumulates in adipose tissue, prostate, and skin. Research links dietary intake to reduced oxidative stress, potential cardiovascular benefits, and lowered risk of prostate cancer. It is used as a natural food colorant (E160d) and dietary supplement. Unlike beta-carotene, it lacks vitamin A activity due to absence of beta-ionone rings.
