Polyglycerol Polyricinoleate
Polyglycerol polyricinoleate
Polyglycerol polyricinoleate (PGPR, E476) is a synthetic emulsifier produced by esterification of polyglycerol with condensed ricinoleic acid from castor oil. It appears as a viscous, yellowish liquid and functions primarily by reducing viscosity in chocolate and cocoa products, allowing better flow during molding and enrobing without increasing cocoa butter content. PGPR stabilizes water-in-oil emulsions and is valued for its high emulsifying efficiency at low concentrations (0.1-1%). It is thermally stable and does not crystallize easily. Chemically, it consists of a mixture of oligomeric glycerol esters linked to hydroxy fatty acid chains, resulting in an amphiphilic structure with hydrophilic polyglycerol heads and lipophilic ricinoleate tails. It is approved for use in many jurisdictions as a food additive and is considered safe at typical usage levels.
