Sorbitol

    (2S,3R,4R,5R)-hexane-1,2,3,4,5,6-hexol

    C6H14O6

Sorbitol is a naturally occurring sugar alcohol (polyol) found in fruits such as apples, pears, and prunes. It is produced industrially by the catalytic hydrogenation of glucose. As a sweetener it provides approximately 60% the sweetness of sucrose with fewer calories and a lower glycemic impact, making it suitable for diabetic and sugar-free products. Sorbitol functions as a humectant, stabilizer, and thickener in foods, pharmaceuticals, and cosmetics. Chemically it is the reduced form of glucose, featuring six hydroxyl groups that confer high water solubility and hygroscopic properties. It is slowly absorbed in the intestine and can cause laxative effects at high doses.
