Tara Gum

    Galactomannan from Caesalpinia spinosa

    (C6H10O5)n (galactomannan polymer)

Tara gum is a natural hydrocolloid extracted from the endosperm of seeds of the tara tree (Caesalpinia spinosa). It consists primarily of galactomannans featuring a β-1,4-linked D-mannose backbone with single D-galactose side chains attached via α-1,6 linkages, with a typical mannose:galactose ratio of 3:1. It functions as a thickener, stabilizer, and gelling agent in foods, forming highly viscous pseudoplastic solutions in water. Tara gum exhibits synergistic interactions with xanthan gum and carrageenan, enhancing gel strength and texture. It is approved as food additive E417 in the EU and holds GRAS status in the United States for use in various food applications.
