Vicine
2,6-diamino-5-[(2S,3R,4S,5S,6R)-3,4,5-trihydroxy-6-(hydroxymethyl)oxan-2-yl]oxypyrimidin-4-one
C10H16N4O7
Vicine is a pyrimidine glycoside naturally occurring in fava beans (Vicia faba). It is hydrolyzed by intestinal beta-glucosidases to the aglycone divicine, which induces oxidative damage to erythrocytes via reactive oxygen species generation. This leads to acute hemolytic anemia (favism) in individuals with glucose-6-phosphate dehydrogenase deficiency. Vicine contributes to the characteristic bitter taste of fava beans and has been studied for potential antinutritional effects in legumes.
