Zein
Zein
Zein is the principal prolamin storage protein found in maize (Zea mays) endosperm, comprising approximately 45-50% of total corn protein. It is a hydrophobic, alcohol-soluble protein rich in proline and glutamine residues, lacking essential amino acids like lysine and tryptophan. Zein is extracted commercially from corn gluten meal using aqueous ethanol or isopropanol. It forms tough, glossy, grease-proof films and coatings used in food, pharmaceutical, and biodegradable packaging applications. Due to its amphiphilic nature, zein self-assembles into nanoparticles and microspheres for controlled drug delivery and encapsulation of flavors or nutrients. It is insoluble in pure water but dissolves in 60-95% ethanol or alkaline solutions. Zein exhibits good thermal stability but denatures above 100°C in moist conditions.
